Homemade salsa bursts with seasonal flavor and is very easy to make. This recipe is essentially a twist on a pineapple or mango salsa. Ground cherries are the sweet sister to tomatoes and tomatillos, with notes of pineapple, mango, & strawberry. I’ve been having fun incorporating ground cherries where I might otherwise use sweeteners or fruits that have similar flavor profiles as the ground cherry.

Ground Cherry Salsa
1lb ground cherries, husked
1.5 lbs tomatoes, chopped
1 white onion, diced
2 jalapeños, deseeded, and diced
5 cloves garlic, chopped
Zest of lime
Juice of lime
1T salt, or to taste
Add all ingredients except for lime juice to a pot. Turn on heat to medium-low, bring to a simmer. Simmer for about 45 minutes or until your preferred doneness. Remove from heat and stir in lime juice. You can either leave the salsa chucky or blend it to your preferred texture.
I keep one jar in the fridge, and the rest go into the freezer until I’m ready to enjoy them.
